Roasted root vegetable soup!

Fall has arrived! And with it came my obsession with roasted veggies and warm soups. Last night I merged both into this hearty root vegetable soup. It made the apartment smell warm and cozy, and it made me feel the same way eating it. I used a recipe from 330 Vegetarian Recipes for Health (thanks Dorothy!) as a base, but switched up a few ingredients as I'd bought what looked fresh at the market and added some spices that I already had.

Serves me three times (because Mitch wont eat such things)

Ingredients
2 tbsp olive oil
1 onion, roughly chopped
1 small butternut squash, peeled and chopped into 1 inch cubes
2 carrots, chopped into thick rounds
1 red bell pepper, cut into quarters
1 small parsnip, cubed
1 turnip, cubed
1 leek, thickly sliced (and then soaked in water to remove hidden dirt)
4 sprigs of thyme
3 sprigs of rosemary
1 tbsp dried oregano
3 cloves garlic, crushed
1 quart low sodium vegetable stock
salt & pepper to taste

Optional
1/4 cup coconut milk (I had some leftover)
1 cup water (depending on desired thickness)
1 tsp Sambal chili paste (for some spice)
1 tsp Thai red chili paste (for more spice!)
1 tsp ginger, freshly grated (because ginger's awesome)
Fresh cilantro for garnish

Preheat oven to 400°F (200°C). Mix cut vegetables and garlic in a bowl and coat with olive oil. Next, arrange veggies on a large baking sheet, in a single layer. Tuck the rosemary and thyme sprigs between the vegetables and place in the oven.

Roast for an hour, or until veggies are tender. (I turned on the broiler for a few minutes to make sure the root vegetables were nice and caramelized.)

Remove from the oven and take out the herb sprigs. Place half the baked mixture into a blender with half the vegetable stock. Blend until smooth (firmly holding down the lid with a dish towel), and transfer to a large pot. Repeat with the remaining veggies and stock. Heat, season with salt and pepper, and let simmer for 10 minutes. This is where my recipe ended, but I decided to add a few more of my favourite soup ingredients.

I next added my leftover coconut milk, a cup of water, Sambal chili paste, and Thai red chili paste, and freshly grated ginger. I almost added a handful of dried lentils, but stopped myself because they soup was already so hearty looking. PS, I made sure to add the Sambal at the end because it gets SPICY when blended!

The result? A warm and hearty, slightly spicy and creamy soup for dinner!

Teal you later

Before putting away the leftover spray paint from my new teal step ladder, I decided to give this vintage half table a quick sand and a coat! I ended up having to go out and buy another bottle of the Liquitex spray paint in Phthalocyanine Green 7 (Blue Shade), but it was totally worth it. PS, it's vintage if I found it in my parents' basement, right? PPS, it's definitely a good idea to wear a mask while spray painting, even in a well ventilated area!

I also got around to framing my Remember to Breathe print (in aqau!). I've always loved this colour combination.

A teal step ladder makes the heart smile

Our apartment has cabinet space for about 8 mugs. Okay, that's an exaggeration. It's more like 6. Either way, that is NOT enough. So last weekend, we installed open shelving along an unused wall in the kitchen. This weekend, we found the perfect colour to jazz up the Ikea step ladder we bought to reach all the (lesser used) items on the higher shelves.

After sanding and priming the disassembled step ladder, we — and by we I mean Mitch — applied one coat of this Liquitex spray paint, in Phthalocyanine Green 7. Liquitex spray paints are amazing! They come on an array of highly-pigmented colours so only one coat is needed. We found this one in the fine arts section at Michaels (There were spray paints in the craft section as well, but they didn't have nearly as many teal options! The magentas looked pretty impressive, too!)

Like I said, only one coat was needed. After drying, Mitch put the step ladder back together. I didn't help with this part either, but he did have a giant pumpkin ale by his side the whole time.

A baby shower

This is how I spent my Saturday night...helping my friend, Cathy, prep for her sister's baby shower. I had so much fun making the labels for these mason jar cookie favours.

I love brunch!

I love brunch

Holy guacamole, is there anything better than a mellow weekend brunch? Doubtful, especially when it's brunch at The District. Generally a slave to their veggie benny, I thought I'd lighten things up and get an omelette this weekend. A mushroom, roasted red pepper and goat cheese omelette...with fresh avocado slices. It was ridonculously bright and so very very fluffy! With a side of Kennebec fries, a coffee and a giant caesar, this meal was what every weekend brunch should be made of. Well, Mitch would argue that bacon and maple syrup should also be involved. To each their own.

Food Coma

The Mac Shack

If you're in the mood for A LOT of macaroni and cheese, visit The Mac Shack in Vancouver. While overwhelming at first, it's so much fun getting to choose your own sauces, cheeses, veggies, and meats. You can even add extras like truffle oil and garlic butter...which goes great with the Lobster Mac. Each dish is served in your very own skillet seconds after it comes out of the oven. Oh, and yes, that is a grilled mac and cheese sandwich! *Drool* Must fall into a deep sleep now.

A gallery wall

A gallery wall makes the heart smile. Especially when it showcases so much of your favourite art!

If you're like me then you may or may not get a bit...uhh, high strung (?) when it comes to hanging art and finding that perfect ahhhh-like placement. One option I've seen is to create paper cutouts that correspond to the shapes and sizes of your frames then arrange them on the wall using tape. But if you're like me, you're way too lazy for any of that.

So here's what I did. After arranging all of my framed artwork on the floor and playing with their placement, I hung one of the centre frames on the wall. I then stuck easy-to-remove painters tape around the art to help guide the placement of the surrounding frames. Using the painter's tape was such an easy way to maintain an organized yet relaxed feel to my gallery wall. Is also helped make sure each subsequent frame was level...or at least as level as the first frame! ...They all look straight, right?
