
Craving something hearty but not too heavy for dinner last night, I decided to whip up a giant batch of quinoa. Then with a sudden craving for my warm pasta toss with spinach and sausage, I fried up some veggie sausages and replaced the whole grain linguine with 2 cups of cooked quinoa. The result? A lighter meal with the exact same taste; and still filling and oh so satisfying!
