Inspiration board

I've had this chalk lettering design by Dana Tanamachi in the back of my mind ever since I saw it in the May issue of Every Day with Rachael Ray a few months ago. Looking up the artist, it wasn't a surprise to learn the talented graphic designer and letterer is currently living in New York and working at the fabulous Louise Fili Ltd. What a perfect fit for a design studio known for its exceptionally beautiful hand-lettered packaging, restaurant, and book designs.

Sangria cubes!

Did you know that not every sangria experience has to end with warm berry mush at the bottom of your glass? It's true! These sangria cubes — which aren't actually made out of sangria, although that would be delicious — are the perfect option for chilling and flavouring your wine-based beverages. The berries stay ice cold, and you can benefit from all their wonderful antioxidants by eating them at the end!

For blueberry sangria cubes, wash fresh blueberries and freeze them with water in ice cube trays. It's that simple! I think I'll try fresh raspberries and strawberries next time!

Squashed tomatoes

My latest addiction? Roasted tomatoes. Why? Because roasting them condenses all of their watery tomato-i-ness into tarte little punches of flavour. Also, no messy seeds. Simply slice tomatoes, squeeze out their juices, and arrange on a parchment-lined (for easy clean-up, trust me!) baking sheet. Toss with olive oil, and salt and pepper, and bake at 350° F (175° C) until the scent of tomatoes fills your kitchen (about 25 minutes). The tomatoes should be caramelized but not burnt. Because they're so rich, roasted tomatoes are great tossed with pasta. I mixed mine with squash ravioli and a lemon dressing. So colourful and summery!

Another great way to enjoy this summer's tomatoes is to slow roast them under a low heat. Bake at 250° F (120° C) for two hours, or until tomatoes are flat and crisp. All those wonderful flavours condense into sweet little chips that are perfect for topping salads, soups, and sandwiches. Oh my!

My only concern? Mucking up this beautiful set with my messy writing! Well that, and spending way more time just staring at the letterpress cards than making any of the written-down recipes.

When you kneed pizza...

Love homemade pizza, but not sure how to home-make the dough? I felt the same way...until Google led me to this recipe. Apparently it's a classic from the Joy of Cooking, and it's delicious. Quick and easy to make, it resulted in the closest thing to a professional pizza crust I've ever kneeded and baked. The best part? How much this dough puffs up in the oven. Seriously, I looked away for three minutes and was shocked at how much it had risen.

Sprinkling the pan with cornmeal before pressing the dough down makes it look especially restaurant-styled.

My free-formed vegetarian pizza. Fresh mozzarella, cilantro, and slow-roasted tomatoes, among other toppings.

Mitch's deep-dish pepperoni pizza. Freshly-sliced pepperoni, aged-cheddar, and caramelized onions.

We also sprinkled out respective doughs with dried herbs and spices. In the mix were basil, oregano, thyme, and chili powder (yum!). Fresh garlic was also added to the dough. Why not make your own homemade pizza for dinner tonight?

Lasagna for one, please

I can only imagine all the mini casseroles and warm desserts I would make and eat (by the pairs?) if I had a set of these Mini Round Cocottes by Le Creuset. How great would they be for serving homebaked macaroni, with each portion having an appropriate amount of cheese bubbling? Or for presenting an array of warm spinach dips? Or cold dips? Or hot chili? Or rustic stews? Or pre-portion-controlled apple crumbles?? I may need to get a few sets.

Cookworks offers a mix-and-match set of 4 mini cocottes. I've had my eyes on their Caribbean teal and Dijon yellow cookware for years. Which colours would you choose?

A salad that makes the heart smile - Orzo salad

Orzo salad

This salad is quite similar to the quinoa salad I make all the time. It's quick, it's easy, and it uses a lot of the same ingredients. However, the dressing is a bit different and I used orzo, which is a type of pasta. Here's how I made my salad tonight...

Orzo salad
Serves Mitch and myself today, with leftovers for myself tomorrow

2 tbsp olive oil
2 tbsp rice wine vinegar
1 tbsp Dijon mustard
1 lemon, zested and juiced
1 clove garlic, minced
1 shallot, finely chopped

2 carrots, diced
2 celery stalks, diced
1 red bell pepper, diced
1/2 cup corn
1/2 cup peas
1/4 cup crumbled feta cheese
1 cup dried orzo, cooked and then cooled
1 cup parsley, chopped
salt and pepper to taste

Cook orzo in salted water for 8 minutes, or according to package directions. Let cool, or do what I did and rinse under cold water. (I always hear it's really bad to rinse your pasta because you need the starch to stick to the sauce, but I'm hoping it's less of an dire no-no when adding to a cold salad??)

In a large bowl, whisk together the dressing. If you're nervous about my measurements and fear an overly-dressed salad, whisk the dressing in a separate bowl and mix it in later. Add in cooked and cooled orzo, along with the other ingredients, and toss together. Serve the salad as is or top with grilled shrimp or portabella mushroom. For those recipes, see the post below!

Toppings that make the heart smile - Orzo salad

Marinated grilled shrimp

Marinated grilled shrimp
8 shrimp (I used pre-cleaned and pre-cooked)
2 cloves garlic, minced
1 tbsp olive oil
1 tbsp ginger, minced
2 tsp chili power
salt and pepper

Mix shrimp with marinade and allow to rest in fridge for at least an hour. Pre-heat grill and cook shrimp until heated through. I may be the only person still using the little Champ Grill by George Foreman, but I love it! It cooked both sides at once, so the shrimp were evenly charred in a few minutes. Maybe less, I probably overcooked them. But don't they look yummy?

1 portabella mushroom
1 tsp olive oil
salt and pepper

Okay, this is barely even a recipe! Use a damp paper towel to brush any dirt off the portabella mushroom. Then use a spoon to scoop away the gills, which are said to taste a bit too earthy. Brush both sides with olive oil and sprinkle with salt and pepper. Cook in a pre-heated Champ Grill by George Foreman for 4 minutes. Slice and serve. Walk this way

Here's to starting this summer's after-dinner-walk-with-gelato-when-it's-sunny-out tradition. Summer is definitely my favourite season.

This is my fiancé, Mitch. Going on walks with him is a bit like taking your favourite dog to the off-leash park — He's always running around and climbing things! ♥

Delicious Deliciousness

Nothing screams summer like two scoops of ice cream...or gelato! If you live in Vancouver, you need to visit Gelarmony (formerly Mondo Gelato). I've frequented their Denman Street location, ordering scoops of vanilla soy and chocolate soy, for the past few summers — but this is first season I've had the pleasure of experiencing blueberry soy and strawberry soy gelato. Ohmyguscat, so much deliciousness in a non-dairy treat!!

Just breathe

It might be because I read a few books on Taoism this year that I've become more conscious of my breathing. Every now and then I'll notice that I'm barely inhaling, and an hour later I'll have a giant headache. Not to sound New Age — although, I guess it's more 'Old Age' — but it's important to pay attention to how you're breathing. I designed this print as a reminder to stay conscious throughout the day, and I'm excited to hang it where I'll see it every morning.
